4oz. (100 gm.) unsalted butter- softened
2 oz. (50 gm.) soft brown sugar
2 oz. (50 gm.) caster sugar
2 Tbsp. Brandy (or Rum for Rum butter)
1 oz. (25 gm.) ground almondsoptional- 1/2 level tsp. cinnamon or mixed spice
- Place butter in mixer bowl
- Cream with beaters until very soft.
- With mixer at low speed, slowly beat in brandy alternately with the sugar.
- Continue beating at medium speed until mix is light and fluffy.
- Stir in almonds, then pile into a dish.
- Refrigerate until firm before serving.
